Taste notes

  • Fresh green olive aroma with cut grass and aromatic herb notes.
  • Bitterness arrives cleanly and stays structured rather than harsh.
  • Pepper warmth builds late, which makes it excellent for finishing.

Origin & flavour

A Peruvian oil with real presence on the plate

Vallesur comes from southern Peru, where rare Criolla olives give the oil its green-fruity energy, herbaceous lift, and a peppery finish that stays bright rather than heavy.

It is the bottle to reach for when you want the oil to sharpen the final impression of a dish: over bitter leaves, beans, grilled meat, fish, soups, burrata, or warm bread.

Chefs return to it because it behaves like a finishing seasoning. It has enough personality to change a plate, yet enough control to stay elegant.

Best with

  • Finish grilled vegetables, fish, or white beans where freshness needs to remain audible.
  • Use at bread service, on carpaccio, or over burrata when you want the oil to carry the last aromatic note.
  • Bring it to grilled meat, soups, or even gelato when the kitchen needs aroma without muddiness.

Proof

Judged well, and even better at the table

Vallesur has been recognised in London, Argentina, Japan, and Spain, and it has also earned precise praise from chefs who value aroma, bitterness, and finish in real service.

Vallesur has a rich aroma and a strong personality. In service it behaves more like a seasoning than a generic kitchen oil.
